IDEAS FOR COOKING THIS WEEK -

Smothered chicken breasts and asparagus with mushrooms – Season your chicken breasts with salt and lemon pepper. Cook in a skillet in oil until cooked and golden on each side. Remove and set aside. In the same skillet, cook bacon, remove when done. Keep some of bacon fat in pan and add in sliced onions and saute with some brown sugar. Top chicken with onions, bacon and then shredded Colby jack cheese. Broil for a few minutes to make your cheese crisp and bubbly! For your asparagus, trim and cut into pieces, cook in some oil with some ground ginger, brown sugar and when crisp but tender add in some salt, pepper and mushrooms and cook until mushrooms are soft. Serve with your chicken.

Honey Garlic Spareribs with Hush puppies - If you have time these are really tasty! Line a large roasting pan with foil and set your oven at 325. Cut your ribs a part and season them with salt, pepper, onion and garlic powder. Put them on baking sheet, cover tightly with foil and cook at 325 for one hour or longer if not tender enough. Drain all your liquid from pan. In a small pot, mix honey, apple cider vinegar, soy sauce, minced garlic and bring to a boil then simmer. Brush your spare ribs with the sauce, and put back in the oven at 350 and bake another 30 minutes, basting throughout with more sauce. Serve with a side of hush puppies – Very easy – Whisk flour (3/4 cup), cornmeal (1/2 cup) , baking powder(2 tsps) , salt (1 tsp), cayenne pepper (1/2 tsp) together in a bowl. Then whisk in another bowl milk (3/4 cup) and egg (1) and then combine with dry ingrediants. Add in a bag of frozen corn, and chopped up scallions (1/4 cup). In a deep fryer or heavy dutch oven with oil fry the batters until they are golden brown. (takes about t minutes) I serve mine with honey!

Cilantro Lime Salmon – Another easy recipe and salmon is on sale! Season your salmon with salt and pepper and cook your salmon on the grill (I am using my blackstone grill). In a sauce pan, cook butter, lime juice, honey, and garlic, once all melted together and garlic soft, take off of heat and add fresh chopped cilantro. Pour this over your grilled salmon!

Sausage Rolls – Great as an app or you can serve with some mashed potatoes and a gravy! Take your pastry puff out and make sure it's fully thawed (per directions on box). You can use either the Jimmy Dean hot sausage or regular. . .I am always for the spicy so I like the hot sausage (I usually make both). Mix the sausage, some bread crumbs, milk, minced garlic, paprika, salt and pepper (you can use your hands to combine or just put in the food processor). Take your squared pastry puff and cut into long rectangle strips (4 for each square of pastry). Put your sausage mixture dow the center of each rectangle and pinch the pastry to close. Then cut each sealed rectangle into 4 smaller pieces. Place on parchment paper lined cookie sheet and brush with an egg wash. Cook for 5 minutes at 425 and then lower your heat to 350 and cook another 30-35 minutes (half way through, drain the fat from your sheet). You could use any dipping sauce (ketchup, cheese dip, bbq sauce) that you want, but I like a pork gravy and mashed potatoes on the side.

Easy meal of the week –Strip Steak and carmelized butternut squash – So easy and so deliciuos! Salt and pepper your steak and make sure it is at room temperature. In a skillet put some oil and get hot and sear the steak on both sides, remove from heat and then put some butter and thyme sprigs in. When the butter is melted start basting your steak with it and then put in the oven and cook on 275 and cook for another 10 minutes (depending on how thick it is). I usually just use the meat thermometer to make sure it's perfect. If you like butternut squash like me here is an easy recipe: Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add melted butter, brown sugar, salt, and pepper. Toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes in 400 degree oven, until the squash is tender and the glaze begins to caramelize. While roasting, turn the squash a few times with a spatula, to be sure it browns evenly. Taste for seasonings and serve with your steak.
