IDEAS FOR COOKING THIS WEEK – All from football Sunday Review!

STEAK AND CHEESE PINWHEELS – I chopped steak tips into small chunks and seasoned with garlic salt, onion powder, pepper, celery salt, paprika and dried rosemary, I cooked in a skillet in olive oil and chopped Vidalia onions until onions soft and steak done and then added in Boursin garlic and herb cheese to coat all the steak and add in some fresh chopped parsley. I cooked the steak a head of time and put in the fridge. I think working with it cold is easier than when it’s hot and putting it on the dough but you can try it. Take Pillsbury Thin Crust pizza dough and roll out and season with Italian seasoning, spread a layer of Boursin garlic and herb soft cheese, top with a layer of provolone cheese and then top with your steak mixture. Roll the dough up tight into a log and then cut into 1-2 inch circles, and bake at 350 for 10-12 minutes or until dough is golden brown.(You can serve plain or with a marinara sauce)

SHRIMP STUFFED CORN BREAD – You can make your own corn bread mix or you can buy the box stuff.If you buy the boxed stuff I would use buttermilk when it calls for milk.If you are making your own: Mix 1c. Cornmeal, 1c.flour, 1/4 c. sugar, 1 tbls baking powder, 1 tsp salt, cayenne and paprika. In a separate bowl mix your 1 egg, 1 cup buttermilk, 1/3c. Vegetable oil. And then slowly whisk them together. Then take a greased cupcake pan, and put a layer only about 1/3 up from the bottom of each cupcake.For your shrimp, in a pan I put butter, pureed garlic, chopped chives, spicy old bay seasoning and chopped deveined, shelled shrimp. Put your shrimp mixture in the center of each cupcake and bake, about 8 minutes at 400. Add more shrimp mixture and top with shredded pepper jack cheese and put back in the oven for 2-4 more minutes or until cheese has melted over the shrimp. Pop out and serve!If you want a sauce: I did red pepper and onion relish mixed with a chipotle mayonnaise.

CHICKEN PARM SLIDERS – I pounded out chicken breasts really thin and sliced into small pieces that would fit in a slider roll.Season with salt and pepper and coat in egg wash and then bread crumbs and fry both sides in olive oil and pureed garlic.Put in casserole dish that has a thin layer of your favorite sauce, flip to coat both sides with sauce, top with grated parmesan cheese and shredded mozzarella and bake at 350 until chicken is cooked through and put in your slider rolls.
