IDEAS FOR COOKING –

JALAPENO POPPER MAC AND CHEESE

I have had a bunch of people message me for this recipe after hearing me talk about it. Kayla and I had this for our lady’s lunch last week. It’s super easy and oh so yummy! Cook your macaroni al dente and set aside. In a pot melt butter, add flour and mix. Add in your half and half, then grate your cheeses into your sauce: sharp cheddar cheese, Monterey jack cheese and some Boursin cheese and mix to make your smooth cheese sauce, and season with salt, pepper, garlic powder and onion powder to taste. Chop some sliced jarred hot jalapeno peppers and mix into your sauce and then add in your pasta, mix and top with a mix of panko breadcrumbs and shredded cheddar cheese and bake for 30 minutes or so. (Broil to make your top crusty to finish).

ZUCCHINI AND RED LENTIL FRITTERS

This is a healthy fritter recipe! First soak your lentils for 4 hours so get them soft.While those are soaking you can prep your other food. Grate your zucchini and put in cheese cloth to get all the water out of them and set aside. Once your lentils are done, drain and then put in a blender and mix until it makes a paste, and put in a bowl and add in your zucchini, minced Vidalia onion, chopped serrano pepper, minced garlic, cumin, turmeric, salt and pepper and mix well. Form into balls, and then put in a heated skilled coated with olive oil and flatten out in to patties and cook until brown on each side.
