IDEAS FOR COOKING –
Spanish Cauliflower and Seafood Mix – Aldi sells this frozen seafood mix and I just love it! It has mussels, squid, shrimp, scallops, I defrost and pat out all the water, then cook in butter and spicy old bay seasoning and then set aside. I chop onion, red bell pepper and cook in oil until soft, add in my riced cauliflower (you can use fresh or frozen) and then season with garlic powder, salt, pepper, cumin, chili powder and then add in tomato paste and cook for about 10 minutes and then add in your seafood and mix.
GUINESS BRAISED SHORT RIBS – Serve over mashed potatoes. Coat your short ribs in a mix of flour, salt and pepper and sear each side in oil in a skillet and then put in a crock pot. Scrape the bits off the bottom of the pan, add minced garlic, chopped celery, carrots and cook until soft. Then add beef broth, Guinness, tomato paste, salt and pepper, thyme and rosemary and cook down a bit and then coat your short ribs in crock pot and cook on low for 6 hours or until meat falls off bones, place on top of mashed with some fresh parsley. (You can also cook in the oven for 3 hours at 375)
