IDEAS FOR COOKING –

STUFFED CABBAGE – For your sauce, cook chopped onions in some oil and then add in some garlic, sauté quickly and then add in crushed tomatoes, tomato paste, a splash of red wine, salt, pepper, some sugar and let simmer. Cook your cabbage in boiling water for about 5 minutes or until your leaves can bend. Peel the leaves off the cabbage and let cool. For your stuffing: cook brown or white rice and once done mix in ground beef (or ground turkey) with chopped onions, salt, pepper, paprika, fresh chopped parsley, garlic and onion powder, an egg and some of the tomato sauce and roll into logs. Now put your log on your cabbage leaf and roll around it. In a casserole dish, put down a layer of your tomato sauce, put your cabbage rolls seam down in the sauce and then topped with more sauce, cover with tinfoil and bake at 350 for an hour or until meat is cooked through and cabbage is soft.  

PINEAPPLE COCONUT CHICKEN – A couple of nice days and that means the grill is being used! In a bowl, mix coconut milk, pineapple juice, chili-garlic sauce, lime juice, soy sauce, brown sugar, fresh ground ginger and minced garlic and marinate your chicken thighs for a day in the fridge.  Remove from marinade and season with salt, paprika, cayenne pepper and then grill on a black stone or grill and grill your pineapples, when cooked through, serve on white rice and add cilantro on top.
