DINNERS FOR THE WEEK

T-Bone/Porterhouse steaks on the Grill with Zucchini and Red Potatoes and bacon - (Let’s pick a warm day next week) For zucchini (I chop up some jalapenos, some roasted red bell peppers, cayenne pepper, salt, pepper, and butter and put in a tinfoil wrap and put on the grill. I serve with some Mexican cheese on top) Make a tin foil pack of chopped red potatoes, garlic, and bacon.

Cilantro Lime Shrimp Lettuce Boats with Rice - I buy Goya Chicken Rice and then mix with Mitchell’s Fresh Salsa and a can of black beans and my own spices. Marinate the shrimp in a mixture of fresh chopped cilantro, fresh lime juice, cumin, chopped garlic, salt and pepper.(If you like spice, add a little siracha.)I will marinate the day before and put in the fridge for the night) Cook up in a skillet, once cooked put your shrimp inside your romaine lettuce boats; add some avocados, pico de gallo and sour cream.Serve with the rice mix!

Chicken Cordon Blue with a side of Broccoli – Slice the chicken breast (not all the way through) to create a pocket and pound it out thin, fill with slices of ham and swiss cheese, roll and put in egg wash, coat with bread crumbs, bake it.I make a cheese sauce to top it and the broccoli (Chicken broth, milk, garlic powder, onion powder, grated parm cheese, salt, and pepper and corn starch to thicken)

Lemon Baked haddock with Garlic Parm Green Beans – I melt butter and mix with ritz crackers, parsley, and minced garlic and some lemon juice, salt and pepper.I coat the haddock and place in small casserole dishes.I top with more ritz crackers and bake.In a skillet, put butter and garlic and green beans, when almost cooked add some parmesan cheese, season with camp mix and serve!

Homemade Pizza Night! The kids love doing English Muffin Pizzas – let them choose their toppings! (Throw in a side of sliced cucumbers and carrot sticks for their veggies!)

And I will make grilled pizza for Jeff and me with grilled chicken and tomatoes, ricotta and mozzarella cheese. I use the Pizza dough that you can find in any of your stores deli sections.I cook up some chicken in a skillet with Italian seasoning; chop up some of the cherub tomatoes.Grill each side of the dough (I rub on olive oil to make sure it doesn’t stick) and then top with your sauce, fresh sliced mozzarella cheese, some dabs of ricotta, your chicken, tomatoes and fresh basil.Continue to grill until everything is melted.
