RECIPES FOR THE WEEK

MEDITERRANEAN TARTS – Cut up some yellow, orange, red peppers, Vidalia onions into thick strips and cook in a skillet with butter, and season with salt, pepper, sprigs of thyme until tender and then add cut your cherry tomatoes in half and add to your peppers and Kalamata olives.Roll out some pastry puff into a square and make an outer crust by pricking the middle with a fork and not the edges.In the middle of your dough put your pepper and tomato mix, sprinkle with parsley, drizzle with olive oil and bake for about 25 minutes, before serving add some crumbled feta cheese.

LEMON CHICKEN STIR FRY – You can make this with egg noodles or zucchini noodles (starting Sunday you can get a veggie spiral cutter on sale at Aldi for $12.99!). Marinade your chicken (sliced into strips) an hour or longer in a mix of lemon zest and juice, minced garlic, black pepper, ginger and coriander.In a wok, cook your chicken in sesame oil.Once done set aside and then cook mushrooms, pea pods, beans sprouts and shredded carrots. Toss in some soy sauce, chicken broth, and then your cooked slice chicken.If you want to serve with noodles, cook your egg noodles and add to your dish or if you are doing zucchini noodles, get the water out of them, sprinkle with salt and add to your dish, heat up all together and serve!

TACO PIZZA – For low carbers you can buy frozen cauliflower pizza crust, or use flour tortillas, or pizza dough – whatever your preference.Cook up your ground beef and season with cayenne, chili powder, cumin, paprika, onion and garlic powder, salt and pepper, drain fat and set aside.Roll out your dough or lay your tortillas or cauliflower dough, if you use tortillas put a layer of refried beans spread, put on your taco meat, shredded cheese, then put another tortilla, refried beans, taco meat, shredded cheese, and sliced olives, tomatoes, sliced avocados and hot sauce, bake for about 10 minutes until cheese is melted, then top with some sour cream and chopped scallions.

SHRIMP PO’ BOYS – After posting a pic last week on Facebook a lot of you wanted the recipe.I don’t see any crazy sales on raw shrimp so you can just splurge or wait until there is a sale.I prefer the large shrimp (13-15 count).I take the shells off the shrimp and season with salt and pepper and then let them sit in a mix of buttermilk and one egg while I prep the other things. For the coating mix some flour, corn meal, onion and garlic powder, cayenne pepper, paprika, creole seafood seasoning and some salt and pepper. Toss in the dry mix. Fry them up in some olive oil and set aside.For your sauce: Mix mayonnaise, minced garlic, lemon juice, Dijon mustard, relish, sriracha, chopped scallions, Worcestershire sauce, creole seasoning, and salt.I just keep tasting it until I like the consistency and taste. (This sauce is so good and even better the next day so make a bunch if you like it and throw it on everything, haha).I like the torpedo rolls at Shaw’s but any kind of hoagie roll that you like is good and toast.Melt some butter with some crushed garlic and spread on your toast, Then put on some shredded cabbage (or iceberg if you prefer) and slice tomatoes, sliced pickles, the shrimp and top with your sauce!

EASY SAUSAGE SKILLET – Sometimes I am in a rush and don’t have a ton of time to cook.In a skillet, add olive oil and chop up some chicken sausage (I usually do the spicy Italian for me and the kid’s like the garden vegetable) and add in some chopped onions, sliced peppers, sliced zucchini, sliced summer squash, chopped eggplant and when just about tender add a can of stewed tomatoes.Add in some Dijon mustard, garlic powder, salt and pepper and mix, add in a bag of cooked rice cauliflower and put your shredded cheese on top to melt.
