Disappointed in their sales this week!If you like Strip Steak this is a good price but for everything else this week I am finding cheaper prices everywhere else so one less store to visit this week if you don’t want to do Strip Steak and you could get porter house or t-bone steaks at Market Basket.

RECIPES FOR THE WEEK

EGGPLANT, SALAMI, TOMATO AND GOAT CHEESE BITES – A lighter dinner and so easy to make, but still yummy and you can serve with a salad if the sandwich isn’t enough. You could also do BLT bites with melted cheese on top, egg and avocado bites, etc.Combine some oil and minced garlic together and spread on your mini bagels and toast in toaster oven.Spread some goat cheese on them, and top with some slices of salami.Brush some oil/garlic mixture on some sliced eggplant and tomato slices and start with the eggplant in a frying pan and cook on both sides for about 3-4 minutes or until soft, do the same with your tomatoes (less time for the tomatoes).Layer your eggplant and tomatoes on top of your salami and then you can add fresh basil and/or argula to top it off.

SLOW COOKED ROAST WITH PAPPARDELLE AND CHEESE – This is a set in the crock pot all day kind of meal and then zip home and put the rest together!For your roast, season with salt and pepper, in large skillet, brown each side in oil and then put in your crock pot.In the same pan (add more oil if needed), put in chopped onion, minced garlic until soft, then put in some red wine (I use whatever I have (tried pinot noir last time), some beef stock, a can of tomato puree and some water.Bring to a simmer and then pour into your crock pot on top of your roast.Cook on low for 7 or 8 hours. Once it’s done you’re your ready to serve shred the roast.Cook your pappardelle pasta al denteand then add to your roast/sauce mix, plate and then put on grated pecorino (romano) cheese!Serve with garlic bread.

GRILLED STEAK WITH BUTTER AND CHEESY ZUCCHINI POTATOES – (You can use any of the steak on sale!Porterhouse, T-bone and Strip Steak on sale this week!)Season your steak with salt and pepper and let get to room temp for about 20 minutes or so.Grill on each side to your preferred temp.For your butter, mix soft butter, with fresh thyme, worcestshire sauce, minced garlic and mix together and put in the fridge to harden again.Once your steak is done place your compound butter on top and then sprinkle with black pepper. Cheesy Zucchini Potatoes: Slice your zucchinis in to round chips and yellow potatoes (thinner chips than zucchinis because they take longer to cook) season both with salt and pepper and set aside.In a bowl mix 2 cups of whipping cream, 1 cup of parmesan cheese, minced garlic and minced chives.In a casserole dish, layer (standing up like an accordian) zucchini, potato, zucchini, potato, etc.Pour your cream mixture on stop and then top with parmesan cheese, bake for 45 minutes at 400 or until potatoes are soft.Top with more chives and serve with your steak.

TRIPLE CITRUS GLAZED GRILLED SALMON WITH ROASTED PARM PESTO POTATOES – In a sauce pan, combine, orange juice, lemon juice, lime juice, chicken broth, minced garlic, orange marmalade, soy sauce, light brown sugar, butter, salt and pepperand a dash of rice wine vinegar.Heat until it becomes syrupy and then taste, add more or less fruit juice to get it to taste yummy!For your salmon brush with olive oil, and season with salt and pepper.Grill for only about 3 minutes on each side and then brush on your glaze and cook for another minute on each side.Don’t over cook JOnce you pull the salmon off, you can pour on some more glaze.For your potatoes, chop up some potatoes into cubes and toss in your pesto sauce and then put on a baking sheet for 20 minutes or until almost tender and sprinkle on parm cheese and cook for another 10 mintues (or until fully cooked) or cook on foil on the grill and cook until tender and sprinkle with the parm cheese.

PORK TENDERLOIN WITH OREGANO MARINATED TOMATO SALAD – Buy your already marinated pork tenderloin at Market Basketand put on the lit side of grill and sear on each side, then move to an unlit part of the grill and keep the other half of the grill on a high heat and cook for about 15 minutes or when internal temp is 145, then wrap loosely with foil and let rest for about 10 minutes so it continues to cook and remain juicy.For your tomato salad, if you have a garden like me then you have plenty of tomatoes, if not they are on sale at a bunch of places this week.Cut your tomatoes into wedges or halves if small, use different sizes, colors to bring out the most flavors.Toss in olive oil, salt, pepper, and chopped oregano leaves.Put in the fridge for 30 min to an hour to get a lot of flavor!
