RECIPES FOR THE WEEK

SPICY CRAB STUFFED SWEET PEPPERS – I know the Pats aren’t on, but hey, it’s Sunday and that is my cooking day!So here is a Sunday app for you!Mix mayonnaise, crème fraiche, mustard, lemon juice, grated fresh gruyere (manchego cheese), chopped parsley, chopped chives, paprika, cayenne pepper and an egg and once combined, mix in crabmeat, salt and pepper.(I use lump canned crab meat). Cut the tops off of your sweet red peppers and remove the seeds, while keeping the pepper whole. Stuff your crab mixture into your peppers.Spicy Sauce recipe: Use regular or Japanese mayonnaise and mix with sriracha, a touch of sesame oil and a squeeze of lime juice, onion and garlic powder. (Keep tasting until you get the spice level you are looking for). Bake until peppers are soft and then top with your spicy sauce and cook for a few more minutes until sauce is hot on the pepper.You can serve with more dipping sauce on the side.

CHICKEN APPLE STIR FRY OVER RICE – You can choose a brown rice, white rice or cauliflower rice for this dish.Cook whatever one you choose according to package and set aside. In a bowl, combine, chicken broth, apple cider, some cornstarch, lemon juice and soy sauce. Cut your chicken into bite size pieces, season with salt and pepper and cook in oil until cooked through and then set aside. Then put in more oil and chopped onion, until tender and add in pieces of chopped honey crisp apples, season with cinnamon and cook until apples are crisp but tender.Stir in your chicken/apple cider sauce and cook all together until thickened.Add in your chicken to heat back up and season with salt and pepper and serve over your rice.

JERK PORK CHOPS WITH GRILLED PINEAPPLE AND SWEET POTATOES – In case you still need that taste of summer. Mix olive oil, brown sugar, jerk seasoning, grated lime peel, minced garlic, cayenne pepper and rub on to your pork chops.Slice your sweet potatoes and your pineapple and spray with cooking spray, season your potatoes with onion powder, salt, pepper and cayenne pepper.Grill up your pork chops, pineapple and sweet potatoes until all done.Serve with lime wedges.

APPLE AND POTATO MEAT PIE – its fall so why not enjoy apples in our dinner too! Cut your boneless pork shoulder (picnic pork) into 1 inch pieces (I will also use my tenderizer to pound out the pieces) and season with salt and pepper.In a pan melt butter in some oil and add in your pork pieces and cook until brown on each side and set aside.Add in thinly sliced onion and minced garlic until soft and then add some thin slices of potatoes (I used white potatoes) and then add in chopped apples (I used granny smith).Sprinkle in some brown sugar, salt, pepper, cayenne pepper, nutmeg, cinnamon and some flour.Add in a can of your favorite pale ale and cook until it thickens.Once it’s a thick gravy like consistency add the pork back in. (If you want a bottom crust, take a puff pastry sheet and put on the bottom of your baking dish, press down and poke holes in it.You can weigh it down by putting dry beans on top of it because you don’t want it to puff up and then just precook so it’s not all soggy from the pork mixture).Once the bottom is ½ way done you can put your mixture in the baking dish and then roll out another puff pastry sheet to fit over the top of the dish. Cut the extra off and then brush an egg wash over the top and cut in a couple holes with a knife to vent. Cook for 45 minutes at 400 or until the top crust is a golden brown.

FISH PRIMAVERA – If you have veggies sitting around in the fridge then this recipe is great for you and super easy!Preheat your oven to 400.In a large bowl, combine your veggies.Chop up your veggies into pieces (if you are doing carrots, shred them, chopped takes so long to cook).I am using chopped broccoli, asparagus, squash, grape tomatoes, mushrooms, shredded carrots and combine with olive oil, salt, pepper, garlic, and onion powder.Start to roast the coated vegetables for about 10 minutes.Season your fish fillets with salt and pepper and roll up and put seam side down.After 10 minutes toss your veggies in more olive oil put on the baking sheet t and put your rolled up fish on top of the veggies, drizzle the fish with oil and some lemon juice and cook for another 20 minutes or until fish and veggies are cooked through.Sprinkle with fresh grated Romano or parmesan cheese and fresh chopped basil.
