RECIPES FOR THE WEEK

FRIED CHICKEN POT PIE BITES – Dice up chicken breasts into small pieces and cook in butter in pan until cooked through then add in sliced onions and cook until soft, add in small diced carrots, peas and cook until tender but not too soft.Sprinkle in some flour, salt and pepper and blend.Add in some milk and constantly stir until it gets thick.Store your mixture in the fridge for an hour. Once cold you should be able to scoop the mixture into some flour, coat with flour and shape into a ball. Coat with egg and then dip into panko bread crumbs and put the balls into oil and fry until golden brown.

CHILI AND CORNBREAD – I love chili and then add some corn bread and delicious!Super easy and the longer you let it cook the better the taste!Brown your ground beef and I cook with onions and green, red, orange, yellow peppers, and put in crock pot or large pot, brown your hot Italian sausage, and add, then a large jar of Traditional Prego, can of Mexican style diced tomatoes, chopped jalapenos, 2 cans of pinto beans (or 1 large can), then time to season, chili powder, cayenne pepper, onion and garlic powder, cumin, oregano, paprika.Cornbread: Preheat oven for 400 degrees and spray a round cake pan.In a bowl combine 1 cup of flour, 1 cup of cornmeal, 2/3 cup sugar, 1 teaspoon salt, 3 ½ tsp baking powder, then add in 1 cup of milk, 1 egg and 1/3 cup vegetable oil. Mix well and pour batter in the pan and cook for 20 minutes.

BAKED PIZZA CHICKEN AND CASAER SALAD – Preheat your oven to 400.In a bowl mix Italian seasoning, garlic powder, salt and olive oil. Pound out your chicken breasts to less than an inch thick. Coat all sides of the chicken with your Italian seasoning mixture and cook for 15 minutes.Pull out of oven and put pizza sauce on top, then put on a slice of fresh mozzarella and slices of pepperoni.Return to oven and bake for another 5-10 minutes or until chicken is cooked through.Serve with Caesar salad.

CREAMY REUBEN SOUP –Delish always has great recipes!In a large pot heat olive oil and then add in diced up rye bread cubes, stir to coat with the oil and make them golden brown and set aside.In the same pot, add in some more olive oil, chopped onions and cook until soft, finely chopped carrots, minced garlic, caraway seed, black pepper and cook for about 5 minutes or until everything is soft.Add in ½ cup water and 4 cups of chicken broth, bring to a boil and then put on simmer for 20 minutes or so.Add in corned beef that has been chopped into cubes, 8 ounces of sauerkraut, ½ cup of heavy cream and bring back to a boil then simmer for 5 minutes.Add in fresh chopped parsley. When you serve, put rye croutons on top, add the shredded gruyere/swiss cheese mix on top, and then broil until it’s melted and bubbly.Sooo good!

ARTICHOKE SPINACH CHICKEN – Season your chicken with salt, pepper and oregano and cook in a skillet until your chicken thighs is cooked through, remove, set aside.Add butter to the same pan, put in minced garlic, then fresh baby spinach, artichoke hearts, roasted red peppers and cook until spinach has wilted and then add half and half and simmer.Add in shredded mozzarella cheese and fresh grated parmesan cheese, season with more salt and pepper.Add the chicken back to the sauce and cook through.Serve with your favorite side. (I chose Edamame Pasta.)
