RECIPES FOR THE WEEK

MINI STUFFED POTATOES – You can put any filling you want to in these little potatoes, but I found recipes for these Greek inspired fillings.One is sweet and one is savory.Place your little potatoes (Little Potato co or store brand is cheaper this week at Aldi), in a pot and cover with cold water and bring to a boil.Cook until tender but not too soft (about 15-20 minutes).Drain the potatoes and rest until cool enough to be able to handle.While potatoes cook prepare your fillings.IN one bowl mix soft goat cheese, chopped roasted red peppers, chopped Kalamata olives...In another bowl, mix soft goat cheese, chopped pistachios, honey and cinnamon.Once your potatoes are cool, use a sharp knife and cut a small slice off bottom of potato so it will sit flat, cut a small circle on the opposite side and scoop out some of the potato (save it and use it later – you could always serve as a side with the meatloaf recipe below!)Start filling your potatoes with your mixtures . . . on the savory mix you can top with fresh chopped parsley.On your sweet filling you can top with some more chopped pistachios.(If you don’t like goat cheese, you could stuff these potatoes with whatever you like – try a Mexican flavor with taco meat and avocado, or do Italian and put in pepperoni, sauce and cheese. . . .Have fun with it!)

SPINACH STUFFED PORK CHOPS – Cut a pocket in your thick cut pork chop (don’t cut all the way through).Season your pork chop with garlic and onion powder, salt and pepper and paprika and set aside.In a skillet heat some olive oil, and minced garlic until it’s soft, and add in some fresh spinach and cook for a minute or 2 and thenadd in some crumbled blue cheese, salt and pepper and cook until the spinach is wilted and blue cheese just starts to melt.Remove from heat and then stuff each pork chop with the mix and secure with toothpicks.Sear each side of the pork chops in the skillet then put in the oven for about 10 minutes at 400 degrees.Serve with a Fresh Express Salad Kit (they are only $1.99 this week at Hannaford)

CROCK POT HONEY GARLIC CHICKEN – Take your chicken thighs and put in a crock pot.In a mixing bowl put in minced garlic, honey, ketchup, soy sauce, oregano, chopped fresh parsley and whisk. Pour in your crock pot and cook on low for 4-5 hours and the chicken will fall right off the bone.I like mine on top of riced cauliflower and then add more of the sauce and some toasted sesame seeds!

BUTTER CHICKEN WITH EDAMAME NOODLES – I used chicken breasts, because of the sale, but you could use thighs too.I cut the chicken breasts into smaller pieces of chicken and seasoned with salt, pepper, onion and garlic powder, chili powder, cumin, turmeric and paprika and browned in oil in my skillet and when not fully done I set aside in the oven on warm.IN my skillet I put in chopped onion and some butter and cooked it while scraping the chicken bits off the pan. When onions are soft, add in minced garlic, ground coriander, cumin and garam masala, cinnamon, nutmeg, all spice and ginger.Cook down on a lower heat for about 20 minutes or so and then add a can of crushed tomatoes, paprika, chili powder and sauce and keep simmering.(I wanted more veggies in the dish I was making so I added fresh spinach and sliced mushrooms and cooked them down with the tomatoes until everything was soft).I then added in some heavy cream and sprinkle in some sugar and keep mixing and tasting until you get the taste you want.Then put your chicken back in the sauce, coat and garnish with chopped fresh cilantro.I served over edamame pasta (find it at Aldi) but the traditional recipe is to serve over basmati rice with naan.

PIZZA MEATLOAF – Heat your oven to 350.Toast some bread (multigrain is good) and break up to make bread crumbs. IN a large bowl combine your bread crumbs, ground beef (or ground turkey), pizza sauce (I like Prego traditional), chopped onions, chopped zucchini, ricotta cheese, egg whites, garlic and onion powder, Italian seasonings, salt and pepper and mix all together.Put your meat mixture on a cooking sheet and free form it into a loaf and top with more pizza sauce to coat all sides and bake for 45 minutes.Remove from oven and add more pizza sauce and top with shredded mozzarella cheese and bake for 5-10 more minutes.
