IDEAS FOR COOKING THIS WEEK -

Moroccan Chicken Bowl – Make your chicken rub, paprika, cumin, cinnamon, salt and pepper and rub onto your chicken breasts. Cook in a skillet in some oil. For your tomatoes – toss cherry tomatoes with olive oil, scallions, salt and pepper. For your slaw – whisk cider vinegar, honey, salt and pepper and put over shredded red cabbage and if you like pickled red onions – slice thin red onion and put in a bowl of red wine vinegar, salt and sugar. In a bowl, put some chopped romaine lettuce and then top with your tomaotes, slaw, onions and top with your cooked sliced chicken.

Mediterranean Pita Pizzas - In a skillet cook ground sirloin, chopped red onion, garlic, hot sauce, cumin, ground coriander, lemon zest, salt and pepper. Put your Naan breads in the oven at 400 degrees on a baking sheet. Cook for 3 minutes and remove from oven, flip over and top with beef and bake for another 10 minutes until the pita is golden and a little crisp. While that’s cooking, slice very thin red onion and toss with olive oil, lemon juice, salt and pepper and add arugula. Ina bowl mix some plain yogurt and lemon juice. When your pitas are done, top with your arugula, drizzle with yogurt and sprinkle with sliced almonds.

Baked Potato Bar – I love doing baked potato bars during Pats games. This week no Pats on Sunday but I am going to do a baked potato bar anyways and add in some sweet potatoes to the mix. Bake your russet and sweet potatoes for an hour on 425 (make sure you poke holes). While those are baking, you can prep all your toppings: southwest style potatoes- black beans, cilantro, jalapenos, avocado or guacamole. Fall flavors: chopped apples, cranberries, shredded Brussel sprouts and cheddar cheese. Greek: dill, red onion, lemon juice, feta, tzatziki sauce. Other sides: bacon, chopped ham, broccoli, cheddar cheese, sour cream, scallions, chili, salsa, pulled pork.

Chicken Cordon Bleu Casserole – This is the low carb version. Cook your chicken breast in oil on a skillet and then add in chopped ham, onion and mushrooms. Cook until onions are soft. In a pot, steam a head of cauliflower in chicken broth and when soft, mash up. In a pot, mix heavy cream, parmesan cheese, sour cream and some chopped up swiss cheese, salt and pepper and tarragon. Cook until all cheese is melted and soft. In a casserole dish mix your chicken, ham and veggies mixture with your mashed cauliflour, pour on your sauce and then top with slices of swiss cheese. Bake for 30 minutes or until the top is golden brown and melted.

Easy meal of the week – Philly Steak and Cheese - I know some of you will say no way to this recipe, but if you have ever gone to philly then you know the Pat's " with wiz" is nothing like our chunk steak and American or Provolone, no extra veggies on the real philly style either, just cheese, steak and onions . . .Their recipe has Cheez Whiz and it's so worth it! In a skillet cook thinly sliced vidalia onions in vegetable oil. Once they are tender but not brown remove them from skillet and set aside. In the same skillet add some more oil and your shredded steak, season with salt and pepper. Once cooked through add your onions back in. In the microwave heat your cheez whiz until soft. Toast your sub roll, put mayo on both sides, add your steak and then put some whiz on top! Serve up with some fries!
