IDEAS FOR COOKING –
BAHN MI SANDWICHES – I marinated thinly sliced pork for a day in the fridge in a mixture of honey, soy sauce, chopped scallions, minced garlic, sesame oil, lemon grass, chopped shallots, fish sauce, and sugar. Pickle your vegetables: heat vinegar and water and dissolve sugar, pour mixture over matchstick carrots and grated daikon radishes and put in the fridge.When your done marinating, cook your pork, prep your bread, I like it a little toasty, but that’s your choice. Mix a bit of mayo, chili paste and soy sauce and spread on bread, add your pork, pickled veggies, sliced cucumbers, sliced jalapenos and fresh cilantro. Delicious!
SHRIMP PO BOYS – One of my all-time favorites. Marinade your peeled, deveined large shrimp in a mixture of butter milk and sriracha. While that sits in the fridge for about an hour, I prep everything else. Shredded lettuce sliced tomatoes and your remoulade sauce: mix horseradish, mayo, sriracha, dill relish, spicy brown mustard, onion and garlic powder, paprika and put in the fridge. In a bowl mix corn meal, flour, Cajun seasoning, paprika, onion and garlic powder. When you are ready to cook your shrimp, take from buttermilk mixture and coat in cornmeal mixture and fry on each side in oil until golden brown and cooked through. Toast your sub roll, add your remoulade sauce, shrimp, lettuce, tomato and pickles. Enjoy!
