IDEAS FOR COOKING – This is what I made for Super Bowl Sunday!
PUFF PASTRY APPS – I cut puff pastry sheets into small squares and put in a greased mini cupcake baking pan and then poked fork holes in the bottoms. For Italian Puffs: mixed an egg, with ricotta, a half of a cherub tomato, chopped basil, Italian dry seasoning and then topped with a piece of fresh mozzarella. For Greek Puffs: Chopped marinated artichoke hearts, chopped eggplant, chopped roasted red pepper, chopped fresh spinach, chopped Greek pepperoncini, olive oil, oregano, and feta cheese. For Buffalo Chicken Puffs: Made buffalo chicken dip: shredded chicken, softened cream cheese, shredded cheddar cheese, Franks RedHot, ranch dressing and then topped with blue cheese crumbles. For Mashed Potato Puffs: Mashed potatoes, chopped bacon, shredded cheddar, chopped scallions, seasoned with Spud Fixin’. Baked all of these at 350 for about 20 minutes or until puff pastry is golden.
SAUSAGE GRINDERS – We had hot and sweet Italian sausage grinders with peppers and onions.
SOUTHWEST EGG ROLLS – We start the season with these and end the season with these! Mix shredded chicken, frozen spinach (thawed and drained), chopped red pepper, corn, chopped jalapenos, black beans (rinsed and drained), seasoned with cayenne pepper, salt, pepper, garlic powder, onion powder, paprika and then some shredded Mexican cheese. Put some of your mixture on an egg roll wrap, fold and then fry. Serve with Ranch.
