RECIPES:
CHICKEN AND MASHED BOWLS – Kayla talks about Famous Bowls at KFC and although I haven’t tried one, it looks good and I figured I could try this at home. Pound our chicken breast and cut into chunks.. .smaller than nugget size (more like bite size) and put in flour, egg wash and bread crumbs and fry until golden and cooked through. Make home made mashed potatoes: I use Yukon Gold and mix with whipped cream cheese, salted butter, heavy cream, and Spud Fixin’ seasoning made my Camp Mix and pepper. In a casserole dish, layer your chicken bites, 2 cans of cream corn and 1 can of regular corn and then your mashed potatoes on top. Bake for 25 minutes and then smear a layer of soft butter on top and broil until golden on top. I let Jeff and the kids choose if they wanted to add shredded cheddar cheese on top or gravy. For my gravy, I mixed chicken stock with corn starch and then added a can of cream of chicken soup, Italian seasoning, fresh chopped parsley and some fresh thyme.
Football Season:
FRIED JALAPENOS WITH BRIE AND HONEY DRIZZLE – I saw a picture of these and my mouth watered! I love sweet and spicy and I can’t wait to give them a try this weekend! Cut small slices of brie (a square that will fit on top of your jalapeno slices) and set aside. Season flour with salt and pepper, dip sliced jalapeno slices in the flour, and then in an egg wash, then in Italian seasoned panko crumbs and fry in a skillet with vegetable oil for 2 minutes on each side or until golden brown. Remove and put on paper toweled plate to drain oil. Put a piece of your brie on top of the fired jalapeno so it melts on top, then sprinkle with crushed red pepper and drizzle with honey. (If you like extra hot, you can use hot honey instead.)
