RECIPES:
CRISPY CHICKEN SANDWICHES – Save your pickle juice!Or stop into Calef’s and buy some pickle juice . . .Roadkill always buys me some when he stops in. Pound chicken breast and cut it into sandwich size pieces, put in a Ziplock bag and add pickle juice and let sit in the fridge for 24 hours. In a bowl mix flour, cornstarch, paprika, salt, pepper, garlic and onion powder, cayenne pepper, and sugar. Remove chicken from pickle juice and put in a bowl of butter milk. Coat with the flour mixture and fry until cooked through and crispy. Top with cheddar cheese and broil until melted, serve on a brioche bun with lettuce, pickles and Chic Filet Sauce.
PEA AND PESTO PASTA SALAD – Cook small pasta shells according to package and set aside to cool. Save some of the water from your pasta and add to food processor, add peas (steamed), minced garlic, basil, parsley, parmesan cheese, lemon juice and lemon zest and then add in olive oil and blend until smooth, add salt and pepper and then add pesto mixture to your cooled pasta. In a skillet, cook prosciutto until crispy and set aside. In the same pan add a little olive oil, add breadcrumbs, lemon zest, parmesan cheese and cook until golden. Add more steamed peas, chopped arugula, your breadcrumbs, chopped prosciutto and mozzarella cheese pearls to your pasta. Squeeze more fresh lemon juice and lemon zest to taste.
