RECIPES:

CHICKEN PARM LASAGNA – Cut chicken breast into small cubes and soak in buttermilk. In a bowl have a mix of flour and grated parm cheese and another bowl have Italian flavored breadcrumbs. Take your chicken from buttermilk to flour mix, back to buttermilk, then to breadcrumbs. Fry the chicken in olive oil until golden and cooked and then set aside.In a bowl, mix ricotta cheese, egg, grated parm cheese, Italian seasoning and garlic powder, fresh chopped basil. Cook your lasagna noodles to al dente, spray a casserole dish, put three noodles down, top with your ricotta mixture, your chicken pieces, and your favorite pasta sauce, shredded mozzarella cheese, and then repeat until the last layer is the mozzarella cheese. Bake at 350 for 40 minutes or until bubbly, then broil the top so the cheese is melted and bubbly. Serve with Italian bread or garlic bread.

BROCOLI AND CHEESE STUFFED MINI PEPPERS – Cut your mini peppers in half length wise and clean out the seeds and membrane. In a bowl mix soft cream cheese and minced chives, season with salt, pepper and garlic powder. Cook broccoli florets and chop and add to your cheese mixture, fill your peppers. On cookie sheet, line with parchment paper, place your peppers and cook for 10 minutes at 400 or until peppers are soft, then top with shredded cheese and broil on low until cheese is melted and bubbly. (You can also make these spicy by adding hot sauce in your cheese mixture. You can also add shredded chicken or bacon to the mixture too.)
