RECIPES:

CORN SALSA PASTA – Cook your orecchiette pasta according to package and set to the side. Shuck your corn and brush with oil and grill on each side. Then cut it off the cob into a bowl and season with salt and pepper. Add chopped red onions, chopped avocados, chopped grape tomatoes, sliced jalapenos and chopped basil. In a bowl mix lime juice, minced garlic, crushed red pepper, salt and olive oil and then pour over your pasta, and add in your veggies, mix and drizzle on some crema.

SHRIMP KABOBS – Hannaford used to sell this marinade that I loved, but they stopped making it so I have to make my own version of what they sell now. I buy Taste of Inspirations Caribbean-Inspired Mango Sauce and mix it with some Local Hive Mango Habanero Honey Hot Sauce, then I pour it into a bowl with some deveined and shelled shrimp. Put in the shrimp for at least an hour. For your kabobs, put a shrimp, a large piece of red bell pepper, a piece of mango (seasoned with salt), a piece of scallions and then repeat until the skewer is full. Grill for 3-4 minutes on each side, while brushing on more of your marinade. Serve with rice and top with chopped fresh cilantro.
