RECIPES:

MINI STUFFED PEPPERS – Cook brown rice in broth until almost done and set aside. In a skillet heat oil and cook chopped onion and chopped carrots, diced tomatoes, until tender, add in minced garlic and season with salt and pepper, paprika and then add in your ground turkey and rice and shredded mozzarella cheese and mix together.Cut the tops off of mini bell peppers and then stuff each pepper with your meat mixture. In a casserole dish, put your peppers facing up and then add in chicken broth at the bottom of the pan and bake at 350 for 45 minutes, covered in tin foil. While that is baking make your cream sauce: Cook more diced onions, tomatoes and carrots in oil until soft and then add in garlic, cook for 30 seconds and then add in white wine and simmer until tomatoes are soft, season with salt and pepper, put in food processor or use immersion mixer to make it smooth then add in sour cream and mix and if you like a little zing add in some crushed red pepper. Drizzle on top of your peppers and top with fresh chopped parsley.

CRAB CAKE BITES – Mix lump crab meat with soft cream cheese, an egg, sour cream, grated parmesan, old bay seasoning, lemon juice, lemon zest, cayenne pepper, chopped chives, salt, pepper. In another bowl mix panko breadcrumbs, parmesan cheese and melted butter and spoon in to a greased mini muffin pan. Top with your crab mixture and bake for 25 minutes at 350 until golden brown. For your sauce: mix sour cream, chopped chives, lemon juice and old bay seasoning.
