RECIPES FOR THE WEEK

STUFFED CABBAGE – I love stuffed cabbage and it’s been so cold lately maybe it will warm me up!Make your tomato sauce by cooking chopped onions in butter in a pot, once soft add garlic.Then a can of crushed tomatoes, a can of tomato sauce and salt and pepper, chopped basil.Add a little red wine (or red wine vinegar if you don’t have any booze), brown sugar and let that simmer.When that’s cooking boil a large pot of water and add your cabbage.Cook until you can pull the leaves off. In abowl mix ground beef and cooked rice or riced cauliflower, onion and garlic powder, Italian seasoning, salt and pepper and a little bit of your red sauce.Mix and then roll in to logs and wrap your cabbage leaves around it. In a casserole dish, put tomato sauce on the bottom, and put your cabbage rolls face down in the dish and top with remaining sauce.Foil the dish and bake for an hour to an hour and a half. Serve up with some mashed potatoes on a side.

BURRITO CASSEROLE – Cook your yellow Spanish rice and then add a little water and a can of rinsed black beans, a can of Mexican style diced tomatoes, chopped cilantro and a small can of corn and set aside.For your chicken I season with salt, pepper, onion and garlic powder, paprika, cumin, cayenne pepper and you can either grill or cook on the stove top.Once done, shred the chicken and mix into rice mixture.I now take a casserole dish and layer my rice mixture, then some medium salsa, then crunch up some tortilla chips and top with shredded Mexican cheese.Bake for 15 minutes and then switch it to broil until your cheese is browned and bubbly.

BIG MAC CHEESEBURGER SALAD – Love this easy recipe from delish!Cook up your ground beef with worcestshire sauce, garlic powder, salt, pepper and onion powder.While that’s cooking in a bowl mix low fat Greek yogurt, red wine vinegar, mustard, ketchup and paprika.Make your salad, chopped romaine lettuce, shredded cheese, grape tomatoes, dill pickle chip, and red onion.Add your hamburg when done and add your dressing on top!If you are not low carbing add some croutons (easy to make your own – cube up some bread, drizzle olive oil and season with salt, pepper, garlic powder and put in the oven until crispy.)

BUDDHA OR ZOODHA BOWLS – On a baking sheet cook up your veggies with olive oil, salt and pepper.The best part of this is you can use any veggies you want! Sweet potatoes, red and green peppers, red onions, mushrooms, chickpeas.Either way once your veggies are cooked and soft, set aside.If you are low carbing it spiralizer your zucchini or buy already packaged zucchini noodles and drain water.Cook your chicken seasoned with salt, pepper, garlic powder and ginger in some hot oil.Once cooked remove chicken and add your zoodles to the hot oiled pan and cook the noodles until soft.If you are not doing zoodles then cook some brown rice, couscous or quinoa for your bowl.In a bowl, whisk together minced garlic, creamy peanut butter, lime juice, soy sauce, honey, sesame oil (as always made to taste).Put your zoodles or brown rice (quinoa, couscous, etc) in the bowls, top with the veggies, the chicken, some sliced avocados, raw baby spinach (optional) and drizzle with your peanut butter dressing and you can also garnish with sesame seeds and cilantro.

GRILLED MEDITERRANEAN PORK CHOPS – Grill your pork chops with salt and pepper and some Montreal chicken seasoning.Cut your zucchini and summer squash into thin strips (julienned).Cut tomatoes in half coat with olive oil, salt, pepper and oregano and put on grill.On a piece of foil, put minced garlic and julienned veggies, olive oil, salt and pepper and cook until tender but still with a crunch.In a bowl combine, balsamic vinegar, Dijon mustard, pepper, salt lemon juice, Italian seasoning and sugar if it’s too acidic. Then add your julienned veggies, cooked tomatoes and Kalamata olives to your dressing and serve over your pork chops and top with feta cheese and parsley.
