RECIPES FOR THE WEEK

CHEESY CHICKEN STUFFED BREAD (FOOTBALL FOOD!) – You can sauce your chicken breast however you want!BBQ, chicken parmesan, chicken broccoli Alfredo).Cook your Chicken breast, and add your favorite sauce, bbq, marinara, Alfredo.Take a large loaf of French bread and cut the top off of it and hollow out the inside.And put your chicken mixture of your choice inside and top with your cheese of choice.I like cheddar for bbq chicken, Italian shredded cheese for over the parmesan, mozzarella over the chicken broccoli Alfredo.(I am making all three for people to pick what they like the best on football Sunday!)Season the top with Italian seasoning and bake for 15-20 minutes until the cheese is melted and brown.Cool so it’s easily cut into slices.

CROCK POT BUTTERNUT SQUASH SOUP AND GRILLED APPLE CHEDDAR CHEESE SANDWICHES – Easy and warms you up with the upcoming cool fall weather!Plus a bonus when butternut squash is 59 cents lb.! In your crock, put in peeled chopped butternut squash, chopped onion, chopped carrot, minced garlic, sage, thyme, salt, pepper and some cayenne pepper and 3 cups of chicken broth.Cook on low in the crock pot for 8 hours or until your squash is soft.Then remove your thyme and sage pieces and put in your blender until smooth.Add in some heavy cream, mix and garnish with parsley. For your sandwich: Cook up some bacon and set aside. Spread apple butter on your slice of bread (I like Brioche bread but use what you want), then put on your sharp cheddar cheese, granny smith apple slices, bacon slices and another slice of sharp cheddar, more bread.Then butter each side and grill it up – or use a Panini maker.

TATER TOT CASSEROLE – Comfort food!Cook some ground beef or turkey and add in salt, pepper, garlic powder, onion powder.Add in some marinara sauce and mix.In a large bowl, mix shredded mozzarella, and grated parmesan cheese, ricotta cheese and an egg. Pour meat sauce mixture into a casserole dish, top with a layer of tater tots, a layer of the cheese mixture a layer of the meat sauce, a layer of tots, and then top with more cheese mixture and bake for 45 minutes until the tots are brown and cheese is melted on top.

ITALIAN SAUSAGE AND VEGGIE SKILLET – This is one of my favorite, very easy and filling meals!In a large skillet I put in finely chopped potatoes and cook with chopped peppers, onions, minced garlic with butter, salt and pepper (and one ever other veggie I have in the fridge that needs to be cooked, zucchini, summer squash, Brussel sprouts, etc.) It’s like making a hash.In a pot of water, put your sausages (hot or sweet) and cook on a slow simmer for 10 minutes or so and then put in a pan with oil and brown up on all sides. I cook a frozen package of riced cauliflower, add in a scoop of hot salsa, top with the cooked veggies, slice the sausage and sprinkle with shredded Mexican cheese and serve with a side of avocado slices.

PORK SCHNITZEL WITH CHEESY POTATOES – Wash and poke your russet potatoes and put in the microwave for about 15 minutes and then let them cool.Take saltine crackers and smash them up in a Ziploc bag to make them fine crumbs, then season with paprika, salt and pepper. In a skillet, heat oil. Season your pork cutlets (for your cutlets, buy boneless pork tenderloin, slice and then pound out to make your cutlets) season with salt and pepper, coat in flour, dip in an egg wash, then coat in your saltine crumb mixture and fry. They cook fast if you have thin sliced pork, only 3 minutes on each side.Set aside on paper towels to drain the olive oil and season with more salt and pepper.Once you can touch your potatoes, slice lengthwise and mash some of the potato inside the skin and add some boursin cheese (garlic and herb cheese spread) shut the skin to have your cheese melt.Serve with some lemon wedges for your schnitzel.
