IDEAS FOR COOKING THIS WEEK - 

CHICKEN CARBONARA BAKE -I made these as an appetizer after finding a recipe in a new cookbook, but I loved it so much I have decided to turn it into a dinner! Cook whole wheat spaghetti according to package. Add in a package of cut frozen spinach and 2 whisked eggs and lemon pepper seasoning. In a bowl, combine chopped chicken breast (I used 3 breasts), a container of onion and chive cream cheese, a jar of sundried tomatoes, garlic powder, onion powder, salt, pepper, grated parm cheese and crumbled pieces of bacon. Put your spaghetti and spinach mixture in a greased casserole pan, top with your chicken mixture and then sprinkle with mozarella cheese and bake. Serve with some warm italian bread and butter. 

CHICKEN HOT AND SOUR SOUP WITH SWEET POTATO -This I found from a Jaime Oliver book but it was made with pumpkin. I tried with sweet potato because I had some in my misfits box this week. I pierced my sweet potatoes and cooked in the microwave for about 4 minutes until they were soft, but not mushy and cut them into cubes and set aside. In a skillet cook your chicken thighs (seasoned with salt and pepper) cook until done, remove from heat and chop. In the same pan, now add in some fresh grated ginger, and garlic, then add in lemongrass that you mash into pan, cook until garlic is soft, squeeze in lime juice, then add in chicken stock and coconut milk, add in your chopped chicken and simmer for 20 minutes and then add in oyster mushrooms, finely chopped red chilies, chopped thai basil leaves, one lime that is cut into wedges, remove from heat and add your chopped sweet potato, a couple tablespoons of fish sauce, a pinch of brown sugar, salt and pepper and serve with lime on the side.

BEEF AND NOODLE STIR FRY -I love stir fry and this one is an easy one! Put some Hokkein Stir fry noodles in hot boiling water and let sit for 2-3 minutes and drain. Cook your chopped steak tips (I stocked up with the sale last week, hopefully you did too!) in your wok in sesame oil, remove when cooked and set aside. Heat more sesame oil if you need it and add in minced garlic and then your stir fry vegetables (you can use frozen or if you have time fresh) I use chopped broccoli, mushrooms, pea pods and carrot slivers, cook until tender and add in your noodles, your beef and then your sauces, teriyaki sauce, soy sauce and chili sauce and make how you like the taste and top with chow mein noodles and serve!

ZUCCHINI SLIDER BITES–Form small patties(the size of sliced zucchini)with your turkey burger or hamburg and put a hole in the middle and put a small piece of cheddar cheese and then fold the burger to cover. Season the outside of the burger with salt and pepper. And Cook on both sides. On a grill pan or outdoor grill, grill each side of sliced zucchini until soft but not mushy. Put your meat on top of the zucchini, a slice of plum tomato, pickle slice, and your favorite condiments and then put a toothpick through it. 

Easy meal of the weekRAVIOLI WITH BRUSSEL SPROUTS–Make your cheese ravioli according to the package and set aside. In a skillet cook up some Italian sausage until brown, add in chopped Brussel sprouts, salt, pepper, onion and garlic powder, and cook until soft, add in some chicken broth and grated parm cheese and simmer for a few minutes and season to taste. Serve this mixture over your cheese ravioli. 

Review of Misfits Box -

Well I have received 2 boxes so far and I was actually so happy that I had ordered this before I knew I had Covid because I didn’t have to worry about grocery shopping while we were quarantined. My big freezer is always stocked with sale meats I buy and then with the fresh veggies and fruits coming right to my door every Monday I was in luck! I am even getting the kids involved in hopes they try and like new things! Parker is so set in his ways that he only likes green beans, cucumbers, carrots and broccoli. He needs to broaden his vegetable horizon!! So now they pick out foods that they want me to order and then they have to try one new thing a week! So far so good, but I did say after my two boxes I downsized my box because we couldn’t eat all the food fast enough. The only issue is for you guys I won't be looking at many fruits and veggie sales on the flyers because I have been making some recipes based on what was in my box! This week I got a bunch of sweet potatoes so that's why I went with the hot and sour soup. I will try to find you some deals on these items but remember I am getting my stuff now from this delivery. This coming Monday will be my first smaller box so I will see how that goes!
