IDEAS FOR COOKING THIS WEEK –

Let’s keep the grill going this week with all your grillables on sale! Or you can just start stocking up so you have them in your freezer this winter too!

KEILBASA AND PIEROGIS ON THE BLACKSTONE – I slice my kielbasa through the middle and grill on the Blackstone and while that’s cooking. I lay a lot of butter on the other side of the griddle and cook sliced Vidalia onions seasoned with salt and pepper and set aside to one side of the griddle to get soft. Add some more butter and then a variety or your favorite flavor of thawed pierogis!Slice your kielbasa and serve everything together!

LOADED GRILLED CAULIFLOWER – Slice cauliflower (less than an inch) into steaks and heavily season with salt and pepper. In a bowl, mix olive oil, garlic and onion powder and paprika, salt and pepper.Heat your grill and then brush your olive oil mixture over your cauliflower and cook on each side for about 10 minutes or until charred in spots. When both sides are cooked, top your cauliflower with cheddar cheese until melted and then crumble bacon on top, chopped chives and drizzle ranch dressing on top.

GRILLED SHRIMP TACO SALAD – In your food processor add some chopped scallions, cilantro, plain yogurt, mayonnaise, chopped garlic, red wine vinegar, lime juice, season salt and pepper. Pulse until all combined and set aside in fridge.In a skillet, heat oil and add tortilla strips in batches until golden brown and set aside on a paper towel lined plate. Grill up some peeled and deveined shrimp that has been seasoned with spicy old bay seasoning and olive oil and then cook until pink and set aside.For your salad, choose your favorite blends: iceberg, red cabbage, romaine . . .and then top with sliced avocados, cilantro, tomatoes, add your tortilla strips, top with shrimp and then add your dressing and serve with a slice of lime.
