IDEAS FOR COOKING WEEK –

PITA BREAD PIZZAS

A quick and easy recipe and the kids like making their own. You can make it with whatever toppings you want. I use Joseph’s whole wheat pita breads and bake on each side at 400 degrees on each side for 2-3 minutes to get a little warm and remove from oven and spread on pesto, chopped salami, halved cherub tomatoes, slices of fresh mozzarella and cook for about 10 minutes until everything is melted.Drizzle with olive oil and crushed red pepper.

OPEN FACED SHRIMP MELTS

I eat a lot of shrimp, so any recipes I find with shrimp I am in. In a bowl mix together mayo, lemon juice, old bay seasoning, Worcestershire sauce, capers, chopped celery and mix, then add in some cooked chopped shrimp and mix it to coat the shrimp.  On a baking sheet put some good artisan bread sliced about 1 inch thick and broil to get it crispy and then flip to toast the other side, remove from oven and top with shrimp mixture and then add slices of plum tomatoes and top with shredded sharp cheddar cheese and then broil until the cheese is melted and golden.
