IDEAS FOR COOKING WEEK –

TURKEY CASSEROLE

I am still cold and need something to warm me up until I can start grilling every day! Start by mixing together panko, grated parmesan cheese, salt and some melted butter to make a crumble. In a sauce pan work on your gravy, cook chopped mushrooms, and chopped onions in butter and season with salt and pepper and once softened add in some flour to coat everything then start adding in chicken stock to thicken. Once thick, remove from heat and stir in some shredded cheddar cheese and grated parmesan cheese. Once your sauce is good, add in chopped turkey (or chopped up rotisserie chicken, cooked egg noodles, frozen peas, chopped parsley, some squeezes of lemon juice, salt and pepper and mix up. Spray a baking dish with pam and then put your turkey mixture into the dish and top with your buttered panko crumble and cook for about 20 minutes until bubbling at 425. Serve with some warm rolls.

PINEAPPLE CHICKEN OVER WHITE RICE

Chop some chunks of chicken breast or thighs and cook in oil until golden brown in a skillet. Then add in some chopped red bell pepper and cook until softened. In a small pot make your sauce, soy sauce, brown sugar, pineapple juice, hoisin sauce, minced garlic and minced jalapeno and cook for about 5 minutes. To thicken our sauce mix cornstarch and water to make a paste and then whisk into your sauce pan and cook until thick. Pour your sauce into the skillet over your chicken and then add in chopped pineapple chunks, cashews, salt, pepper and minced scallions. Serve over rice.
