IDEAS FOR COOKING –
SUSHI BOWLS
I just love sushi! My favorite is probably a rainbow roll with spicy sauce but give me any of it and I will love it! An easier way to eat a roll of sushi is to eat it out of a bowl so you don’t have to learn to roll your own! First you want to get your sushi rice prepared, cool and then let it sit at room temperature. You don’t want to serve it too cold or too hot. While the rice is cooling you can prep everything else. Peel and then chop your cucumber, sprinkle salt, add in a small amount of sesame oil, rice vinegar ands sesame seeds. For seafood you can use crab meat, cooked shrimp, raw shrimp or salmon, smoked salmon. Whatever you are in the mood for! Once your rice is at room temperature add some salt and a sugar and rice vinegar, mix and then put in a bowl and then arrange each topping on the rice: cucumbers, thinly slice avocados, seafood of your choice, chopped nori seaweed, chopped scallions and then serve with wasabi, soy sauce and or ginger.
SAUSAGE STUFFED EGGPLANT
Summer and fresh veggies, nothing better! You can stuff any of your favorite garden veggies! Zucchini, summer squash, tomatoes, peppers! Cut your veggie in half (whatever one you choose) and scoop out the insides, chop into smaller pieces and cook with some sweet and hot sausage. Season with onion and garlic powder and cook through and then scoop into a bowl. In same skillet, add more oil, chopped Vidalia onions and cook until soft then add chopped roasted red peppers and minced garlic and cook until soft and add to your sausage mixture and then add fresh chopped parsley, basil and fresh Romano and parmesan cheese. Scoop the mixture into your veggie and top with a spoon full of a marinara sauce, grated parmesan cheese and shredded Italian cheese and bake for 30 minutes or until the veggie is soft. Then you can broil if you want to brown your cheese.
