IDEAS FOR COOKING –

SPICY EGGPLANT AND PORK -

I love eggplant and usually have it in some form once a week or so. I found a recipe and changed it up a bit. Cut your eggplant into strips like French fries.  In a skillet, heat your eggplant in olive oil and sprinkle with salt and crushed red pepper. And once soft put on a paper towel and set aside. In the same skillet, cook hot ground pork, add in more crushed red pepper, minced garlic, fresh grated ginger, a sprinkle of sugar. Add your eggplant back in skillet once pork is cooked through and add in some soy sauce, fish sauce, rice vinegar and when it gets a little thick your done. You can serve over rice or just plain.

TACO CASSEROLE

You can use ground turkey or beef for this easy casserole. In a skillet cook chopped onions in oil and then add your ground meat and season with salt and pepper. Once cooked through add in taco seasoning, chopped jalapenos and cook for another minute and let cool. While that is cooling, whisk eggs, season with salt and pepper, some shredded taco cheese and then add in your meat mixture. In a casserole dish add your mix and then top with more shredded cheese to cover and bake for 25 minutes or so at 350. Top with more sliced jalapenos, sour cream and cilantro if you like and serve with tortilla chips.
