IDEAS FOR COOKING –

MINI BEEF WELLINGTONS – I just love these apps. Roll out pastry puff until soft and cut into 9 pieces. Cut beef tenderloin into small pieces that will fit onto each square of the puff pastry. Season with salt and pepper and sear on each side, but only cook until a rare and set aside. In same pan as you cooked the meat add in butter, scrape bits of meat and then add in minced Vidalia onions, Bella mushrooms, garlic, fresh thyme, season with salt and pepper and cook until soft. Then add in a splash of Worcestershire sauce and some Dijon mustard and mix. On your puff pastry, put a bit of Boursin Herb Cheese, top with your mushroom mixture and then wrap your tenderloin in a small piece of prosciutto, and wrap up to seal, put face down on parchment paper lined cookie sheet and then whisk an egg and brush the top of each with the egg and bake. 400 degrees, for about 20 minutes or until golden and pastry is cooked through. You could serve with a horseradish sauce, but I don’t even think there is a need for it.

BAKED FRENCH ONION SOUP DIP– In a pan I cooked chopped red onion, Vidalia onion, white onion, yellow onion and scallions in butter until soft and then added some brown sugar, prosecco vinegar and cooked down more. Then added Worcestershire sauce, then soft cream cheese, sour cream and grated parmesan cheese. Then put in a casserole dish and top with shredded mix Italian cheese and bake until bubbly and hot, about 25 minutes on 400. Serve with crostini’s, bruschetta bread or bagel chips.
