IDEAS FOR COOKING –

LOADED BAKED POTATO SOUP – Cook chopped and peeled russet potatoes and mash and season with seasoning salt. I chop and then cook my bacon in my soup pot and then set aside. In same pot with bacon fat, cook a chopped Vidalia onion and a shallot and then add in some minced garlic for a minute then melt a bit of butter in pot and add in flour to coat everything and then add in chicken broth, heavy cream, spud fixin’ seasoning, salt and pepper, paprika. I add the potatoes into the soup and then use my immersion blender to mix it all up. Add shredded cheddar cheese (not bagged cheese, it has to be off the block, so it melts), once it all melts together, serve with bacon and minced chives on top. 

STROGANOFF OVER CAULIFLOUR RICE – In a skillet cook ground beef in butter, and season with salt, pepper, onion powder and set aside once brown. In same skillet, add more butter and sliced mushrooms (I like to use white and Bella), and cook until soft and golden and season with salt and pepper and once soft add in minced garlic and cook for a minute and then add in beef broth, cream cheese, sour cream, Worcestershire, Dijon mustard and paprika stir and simmer and once warm add in your beef and mix together and then serve over cauliflower rice.
