IDEAS FOR COOKING –

CHICKEN GYRO BOWLS – If you want to do a bowl version of a gyro to avoid the carbs from the naan then this is a good choice. Season your chicken with a mix of olive oil, lemon juice, oregano, thyme, minced garlic, salt and pepper and then grill and slice the chicken.  Cook quinoa or brown rice and set aside. In a bowl, combine chopped cherry tomatoes, diced cucumbers, thinly sliced red onion, and squeeze lemon juice, dill, salt and pepper. For your dressing, mix grated and drained cucumber, whole fat Greek yogurt, minced garlic, lemon juice, chopped dill and pepper and salt.  In a bowl start with your quinoa, then top with your vegetables, chicken, rinsed and drained chickpeas, crumbled feta cheese, and some tzatziki sauce on the side.

WEEK 9 OF UNIQUE TACOS:

BREAKFAST TACOS – So good you don’t have to eat this just at breakfast! If you have the time and love potatoes too, cook some shredded potatoes and add into your taco but you don’t need to. Cook diced onions, jalapenos and red bell pepper in some oil until soft. In a bowl whisk eggs, season with salt and pepper and pour into the pan on top of your peppers and onions and cook through and then add in crushed tortillas chips and then mix in some chopped cilantro and shredded Mexican cheese and combine all together and then warm some flour tortillas, and spoon in your eggs, sliced avocados, and add on some salsa or Pico de Gallo. Add some sour cream on top!
