IDEAS FOR COOKING –

JAMBALAYA POT PIE– This is how we made our award-winning dish from Granite Chef. In a skillet on side burner, we cooked chopped carrots and celery. It was a grilling competition so the rest of our veggies we grilled before chopping and adding to the side burner skillet. We grilled a Vidalia onion, green pepper, red pepper, summer squash, zucchini, jalapeno peppers. Once they were grilled, we chopped them all up and add to the celery and carrots, with a bag of Birds Eye Frozen White Rice. We coated our chicken thighs in a creole/Cajun seasoning – make your own: https://www.food.com/recipe/the-best-creole-cajun-seasoning-mix-186029 and grill that along with andouille sausage (I like zatarain's andouille sausage). Once your chicken is cooked through chop, chop your sausage and add to your veggies with more seasoning, cayenne pepper if you want more heat and fresh chopped parsley and salt. In little skillets (https://www.amazon.com/Bruntmor-Pre-seasoned-Nonstick-Cookware-Casserole/dp/B0976GJ285/ref=sr_1_1_sspa?hvadid=570430575024&hvdev=c&hvlocphy=1021903&hvnetw=g&hvqmt=e&hvrand=3322273002339154115&hvtargid=kwd-298068296118&hydadcr=13929_13379039&keywords=mini%2Bskillets&qid=1693318556&s=home-garden&sr=1-1-spons&sp_csd=d2lkZ2V0TmFtZT1zcF9hdGY&th=1) or a large skillet add in your jambalaya.In a bowl mix your Jiffy Corn Bread Box Mix with your egg and milk and then top on your jambalaya, we had to add blueberries because it was the secret ingredient but when I made at home, I say no blueberries. Close the grill (temp should be 400) and cook until your corn bread is cooked through, about 20 minutes. Once out of the grill, top with butter. We served ours with a Mexican street corn and an apple slaw but you really don’t need a side.

WEEK 16 OF UNIQUE TACOS:

CHICKEN BACON RANCH TACOS – Cook your bacon and set aside. Drain but keep some of the fat in the pan and cook chicken breast that has been cut into chunks and season with salt, pepper, chili powder, paprika, onion and garlic powder and some cayenne pepper. Warm hard shell corn tortillas and fill your cooked chicken, chopped bacon, shredded lettuce, chopped tomatoes, shredded cheese, salsa, chopped green onion, drizzle ranch dressing on it.
