FOOTBALL SUNDAY COOKING:

CHILI – Very easy, very delicious! Chop hot Italian sausage and cook with chopped green peppers until soft in a large pot add in minced garlic for last few seconds of cooking. In a skillet brown ground beef and then add to pot.Add in Prego traditional sauce (I like Prego because it’s sweet to cut all the spice I put in). Add in canned, rinsed, and drained pinto beans. Add in salt, pepper, chili powder, cayenne pepper, paprika, cumin, onion and garlic powder and masa. Cook over low heat for an hour or so, mixing and tasting if you need more cayenne for spice.

BARBACOA STEAK TOSTADAS – Chuck roast was on sale! Cut your roast into chunks, and coat in a mix of flour, cumin, oregano, salt and pepper and sear on each side in butter in a skillet and put in a crock pot. In a bowl mix, minced onions, chopped chipotle peppers, minced garlic, a can of green chiles, brown sugar, beef broth, hot enchilada sauce, Worcestershire sauce, lime juice and a dash of apple cider vinegar.Pour mixture onto meat and cook for 8 hours on low. Once it’s tender, remove shred. Remove your sauce from crock pot and thicken with cornstarch/water mixture, squeeze fresh lime juice on the meat and add some gravy back to shredded meat. For your tostadas, buy corn tostada flats and heat in oven, then add a layer of refried beans, your steak, cheese (Queso Fresco or shredded Mexican), then homemade Pico de Gallo (cilantro, lime juice, tomatoes, onions and jalapenos), shredded lettuce and avocado.
