FOOTBALL SUNDAY COOKING:

SEAFOOD STEW – I love seafood and this hits the spot! In a large pot start with oil and cook chopped celery, fennel, carrots, shallots and once soft, add in garlic and then add in some flour to coat. Then I add in a can of fire roasted tomatoes, V8 Spicy hot, clam juice and then blend with immersion blender. Then add in fresh chopped parsley, the fennel fronds, crushed red pepper, salt and pepper to taste. Then add in bay scallops, chopped cod, deveined and shelled shrimp and then fresh mussels. Once the mussels are opened and all the fish is cooked serve with bread or oyster crackers.

BUFFALO CHICKEN BISCUITS – I premade my buffalo chicken the night before. Cook your chicken breast with salt and pepper and then shred. Add in Frank’s Red Hot spicy, cream cheese, shredded cheddar cheese, chopped scallions, ranch and blue cheese dressings. I put in the fridge overnight. I used Pillsbury Grands and sliced them in half, on a greased cookie sheet, I put down one half and then I took slices of sharp white cheddar and cut in to four squares, put a square down on the biscuit, a spoonful of your buffalo chicken dip and then the top of the biscuit and sealed the edges. I baked for about 20 minutes or until golden brown and served with blue cheese dressing.
