RECIPES: Sunday was homemade Chinese food day!

VEGGIE LO MEIN – You can add Chinese sausage (cooked and crumbled), chopped chicken or teriyaki steak. I did this as a veggie lo Mein this time. In a wok, I used sesame oil, and cooked chopped broccoli, green peppers, pea pods, mushrooms, matchstick carrots, sprouts, and baby cut corn (find it in a can in the Asian food aisle). Once veggies tender but still crisp, I added in minced garlic and soy sauce and then removed all veggies from the wok and set aside. I boiled water, added fresh lo Mein noodles (find in deli section of Market Basket), boil for 2 minutes and then strain and put into the hot wok with a little more oil, add in soy sauce and sprinkle with sugar. Once cooked and coated with olive oil, add in your veggies, mix in some Chinese five spice and hoisin sauce.

EGG ROLL BITES – Chop up “pink” pork into small pieces and cook. Cook a bag of cabbage slaw mix (green and red cabbage, carrots) and add in soy sauce and add your meat. Grease a muffin pan, line with two wonton wraps (crossing them so you have four points), spray with oil and bake for 10 minutes until crispy.  Add in your slaw/meat mixture and then cook for another couple minutes until golden and then drizzle on some yum yum sauce.

CRAB RANGOON BITES – In a bowl mix soft cream cheese, minced scallions, onion powder, Worcestershire sauce, a can of white crab meat. In a mini muffin pan, grease, put a wonton wrapper, and add in some cream cheese mix and bake for 10 minutes at 350 or until wontons were golden and crisp.
