RECIPES:

ANIMAL FRIES – I had no clue what animal fries were, but Dylan said I saw these and I really want to try them, so I did some research and I changed things up a bit for Dylan’s preferences. He loved them! Bake French fries (I used crinkle cut) but the online recipes call for shoestring fries. Chop onions and cook in oil and then add in ground beef and cook with salt, pepper, garlic, and onion powders. Once fries are done, take your cooked beef and sprinkle on top and then top with shredded Mexican cheese. Dylan didn’t want sauce on his, but I like the sauce: In a bowl combine, ketchup, mustard, relish, mayo, salt, pepper and sriracha.

ENCHILADA PIE – I made corn bread box mix as directed and put in a greased skillet and baked. In the meantime, I cooked chicken breast seasoned with salt and pepper and then shred the meat. In a bowl mix shredded cheddar cheese, softened cream cheese, Mitchell’s Fresh medium salsa, chopped cilantro, onion and garlic powder and then add shredded chicken. When your corn bread is almost done, pull out of oven and put a layer of enchilada sauce, then put your chicken mixture on top and then another layer of enchilada sauce and then top with shredded taco cheese and bake until cheese is melted, bubbly and cooked through. Top with fresh cilantro and sour cream.
