RECIPES:

CHICKEN PARM LASAGNA – My boys absolutely love chicken parm so why not add that to a lasagna! Chop chicken breast into bite size pieces, dip in flour, whisked eggs and then an Italian bread crumb and fry until golden brown and set aside. Cook your lasagna noodles, al dente, and set aside. Mix grated parmesan cheese with ricotta cheese, Italian seasoning, fresh chopped parsley, fresh chopped basil, and eggs.Grease a casserole dish, put a layer of noodles, layer of chicken, layer of your favorite sauce, layer of your ricotta mixture, layer of shredded Italian cheese, and repeat with three layers, the last top layer I used shredded mozzarella cheese. Put toothpicks on the top of your lasagna and then cover with aluminum foil and bake at 350 degrees for an hour and then remove the foil and then put on a low broil until golden brown. Serve with garlic bread or Italian bread and butter.

EGGPLANT STACKS – If I am making Italian, I also need my eggplant parm, because it’s my favorite! Same process as the chicken: slice eggplant and coat in eggs, Italian breadcrumbs and then fry in some olive oil until golden and crispy. Remove and put on cookie sheet, top with a spoonful of your favorite sauce, fresh chopped basil, grated parm cheese, shredded Italian cheese, then top with another piece of eggplant and continue the process with 3 eggplant and then your last eggplant, sauce, grated parm cheese and then a slice of fresh mozzarella cheese and bake for 25-30 minutes at 350 and then broil to get a golden melted mozzarella on top.
