RECIPES:
STEAK AND NOODLE BOWL – In a bowl mix fresh lime juice, olive oil, fish sauce, light brown sugar, chopped fresno chile and marinade a skirt steak in half of that and then save some to drizzle on after cooked. Cook rice noodles, put into bowls, then top with julienned carrots, thin sliced radishes, thin sliced cucumber and then add your sliced steak and top with chopped cilantro and mint and drizzle with more of your marinade.
Camping Season:
GRILLED PIEROGIES – We have a Blackstone Grill and I just love grilled pierogies. I let them thaw, usually thawed by the time we arrive at camp. You can use potato and cheese or any flavor pierogi flavor you want. On the Blackstone, cook bacon, and then remove and chop. Put some butter on the Blackstone, cook chopped shallots, until soft and then add your pierogies (more butter if needed) and grill on each side until golden brown with the shallots. Top the chopped bacon and serve with sour cream and chopped chives.
