FOOTBALL COOKING:

GENERAL TSO’S CHICKEN SOUP – Cut chicken breast in to bite size pieces for your soup. In a bowl mix flour, corn starch, soy sauce, hoisin sauce, grated ginger, egg white, crushed red pepper and salt and let marinade for 30 minutes or so. I let it sit in the marinade as I prepped the soup. In a pot, sesame oil and chopped onions, chopped red bell pepper, chopped broccoli stalks only (keep the florets for when you serve), and grated ginger, cook until soft and then add in garlic, hoisin sauce, sambal oelek chili sauce (add more depending how spicy you want), crushed red pepper, soy sauce, chopped scallions and then add in vegetable broth. Add in cooked white rice. For your chicken fry up the pieces of chicken in sesame oil until cooked through and then add into your soup. Top with your chopped broccoli florets when you serve.

PORK EGG ROLLS – I buy the Chinese sausage, remove the casing and cook up in a pan and make sure all the meat is crumbled. In a wok or frying pan put down sesame oil,  a bag of red cabbage and a bag of coleslaw mix (cabbage, carrots mix), chopped scallions, soy sauce, Chinese 5 spice, grated ginger, garlic and then add in your cooked meat. Once all cooked and combined, place a spoonful in your egg roll wraps, roll and deep fry until done.

CRAB RANGOON DIP – In a bowl mix softened cream cheese, Worcestershire sauce, garlic and onion powder, a can of white crab meat, salt, and finely chopped scallions, put in a casserole dish, top with mozzarella cheese and bake 25-30 minutes at 350 or until hot and bubbly. Serve with wontons for dipping.
