COMFORT FOOD:

CHICKEN TORTILLA SOUP – I might not like the cold weather, but I really enjoy soups once a week! Cook chicken breast and shred the meat and set aside. In a large soup pot, in oil cook chopped onions and chopped jalapenos until soft, add in flour and coat, then chicken broth, 2 cans of enchilada sauce (I use hot style, but only if you like some heat), then add in black beans (drained and washed), corn, a can of tomatoes with chiles, add in your chicken, season with cayenne and chili powder and fresh chopped cilantro. I served with Southwest tortilla strips, slices of avocado, fresh sliced jalapenos, sour cream and Mexican cheese.

FOOTBALL COOKING:

FRIED TORTELLINI BITES – I made these for New Year’s Eve, and they were devoured by the kids (and me)! Very easy, I bought fresh cheese tortellini and chicken tortellini, but you can get any flavors you want. In one bowl, mix cream and eggs and in another bowl put a Italian bread crumbs, grated parm cheese, more Italian seasoning, garlic powder. Dip your tortellini’s, in the egg wash, then roll in the bread crumbs and then in a skillet with olive oil fry on each side until golden brown and serve with marinara sauce.
