RECIPES:
SHRIMP DIP – Very easy and delicious! In a bowl, mix softened cream cheese, a couple spoons of mayonnaise, lemon juice, fresh lemon zest, chopped scallions, chopped fresh parsley, salt and whip with hand mixer until smooth and then add in chopped cooked shrimp. Put in fridge for a couple hours, remove and top with your favorite cocktail sauce (I used a spicy hot sauce) and sprinkle with fresh chopped parsley and served with Chicken in a Biscuit and Triscuit crackers.
SAUSAGE ROLLS– In a skillet with oil, cook chopped celery and onion and chopped bacon, once everything is soft and bacon is golden add in some garlic and cook for another minute and remove from heat. In a bowl, mix Jimmy Dean Maple sausage, Italian panko crumps, fresh chopped parsley, 2 eggs and your bacon mixture, salt and pepper and combine.Cut thawed puff pastry sheet into two rectangles and in the center place your sausage and make a log in the middle and use an egg wash to brush on the inside and roll the puff pastry to create a log. Do this with the other puff pastry sheets. You should have created 4 logs.Put in the fridge to cool for 30-45 minutes and then remove and cut into bite sizes pieces and brush the egg wash on all pieces. Bake at 400 for 20 minutes on parchment paper on cookie sheet until golden brown. I served it with maple syrup and mustard.
SPANIKOPITA – In honor of Greek Easter I had to make this wonderful flaky, delicious appetizer! I love it! In a bowl, mix fresh chopped baby spinach, salt, ricotta cheese, feta cheese, fresh chopped dill, chopped scallions. Add more salt depending on your taste. Then add olive oil and beaten eggs and combine. Use olive oil to coat your baking pan, and lay down three sheets of phyllo dough and coat with olive oil, then add two more folded pieces of phyllo, then more oil, and then top with the spinach mixture, then layer more phyllo dough and fold the edges back on top of the spinach, continue to layer, coat with oil and then crumble and rip more pieces of phyllo dough on top and then more oil and bake at 400 for about 45 minutes to an hour or until the dough is golden.
