RECIPES:
COCONUT CHICKEN – Slice chicken breast in half and then pound out thin. In a large bowl, put coconut milk, lime juice, fish sauce and then add your chicken and refrigerate for up to an hour. In one bowl, mix flour, cornstarch, salt, pepper. Another bowl beat eggs and last bowl mix panko breadcrumbs and shredded coconut. Remove chicken from coconut marinade, coat in flour mixture, put in eggs and then coat in panko mixture and then cook in oil on each side until golden brown. You can serve on a bun with sriracha mayo and cabbage slaw or eat with broccoli side! Delicious!
SWEET AND SPICY STRAWBERRY CHICKEN – I love spicy and sweet combo, and I saw this recipe on Delish and knew it would be perfect. IN a skillet, heat olive oil, pat chicken breast dry, and season with salt, pepper, garlic powder. Add chicken to skillet and brown on each side and set aside. In a small bowl, mix chopped fresh cilantro, chopped strawberries, chopped jalapenos, chopped shallots and vinegar and salt. IN your same skillet, add more oil and cook chopped jalapenos and shallots and season with salt until soft and then add in some vinegar and add in Chiles, adobo sauce, BBQ sauce, honey and chopped strawberries cook until sauce is thickened and then add your chicken to the skillet and coat on each side, add your strawberry salsa on top to serve.
