RECIPES:

SAUSAGE TORTELLINI SOUP I cooked sweet and hot Italian sausage (no casing) and set aside. In a large pot cook chopped onions and chopped carrots in olive oil until soft then add in minced garlic (cook quick) and then add some flour to make a roux, add in Italian seasoning, tomato paste, a can of crushed tomatoes, chicken stock, heavy cream and then blend with an immersion blender. Add your sausage into the broth, once you have a thick base with a flavor you love (I continue to add salt, pepper, and a lot of crushed red pepper to get a flavor I like). Add in fresh chopped spinach and let it simmer until you have a taste you like and then add in fresh cheese tortellini – don’t add in until you are ready to serve as letting them sit too long will make them overcooked and absorb all your broth. Serve with garlic bread or Italian bread and butter.

STEAK MILANESE BRUSCHETTA – At Walmart you can buy Milanese steak which is perfectly thinly sliced for you to make this. Coat your steak in egg and then Italian breadcrumbs and fry on both sides and put on a baking pan. Put a layer of chopped roasted red peppers, a spoonful of bruschetta tomatoes, a piece of prosciutto, and top with a fresh mozzarella and broil until cheese is melted and bubbly. Slice Italian bread and toast and then I put a layer of sundried tomato pesto and top with the fried steak and serve. (On Sunday I also did a meatless version with egg plant. On the Italian bread toast top with fried eggplant, with bruschetta tomatoes, roasted red pepper, a slice of fresh basil and mozzarella cheese and broil it until bubbly).
