RECIPES:
CORNED BEEF CHEESE BALLS – I could eat corned beef all the time! Here is a fun app for your St. Patrick’s Day Party. Chop up your cooked corn beef and mix with egg, some flour, salt, pepper (add more flour if they are too sticky). In a bowl mix some shredded swiss and mozzarella cheese and then insert into the center of your corned beef and form a ball around the cheese. Set up three bowls, one with flour, one with beaten egg and one with breadcrumbs. Coat your corned beef balls in flour, egg and breadcrumbs then deep fry until golden brown. Serve with thousand island dressing for dipping!
VEGETABLE AND CHICKEN MEATBALL SOUP – In a large pot, cook chopped onion in oil until soft and then add in minced garlic for a minute or so and then add in fresh thyme and white wine to glaze cook for a minute or so then add in chicken stock and let simmer. While that is cooking, in a bowl mix ground chicken, breadcrumbs, egg, fresh chopped parsley, fresh chopped basil, salt, pepper, onion and garlic powder and form into balls. Put your balls into the broth and cook until cooked through and then add in veggie noodles (zucchini, squash, carrots, etc) and some halved cherry tomatoes and cook until soft. Serve with grated parmesan cheese and fresh chopped basil.
